Almond Berry Parfait

Almond Berry Parfait

1 container ( 8 oz) lowfat plain yogurt                       1 cup sliced strawberries

½ cup raspberries                                          ½ cup blueberries

1/8 tsp almond extract                                            1 Tbsp PLUS 2 Tsp granular sugar substitute

2 Tbsp sliced or sliced almonds, toasted

  1. Line strainer with coffee filter or 2 sheets of paper towel.  Place over bowl.  Place yogurt in strainer, refrigerate at least 2 hours or up to 24 hours to drain.
  2. In medium bowl, combine berries. Add almond extract and 2 tsp of sugar substitute.  Toss lightly.  Chill at least 30 minutes.
  3. Transfer drained yogurt to a small bowl, stir in remaining 1 Tbsp sugar substitute.  Spoon 1/3 cup berry mixture into each of 2 wine or parfait glasses.  Spoon half of yogurt mixture over berries. Repeat layering with half of remaining berries, etc.  Top with almonds.

 

Makes 2 servings.  (1/2 cup yogurt with 1 cup berries per serving)
