Peanut Butter Berry Bars
2 cups (about 5 packets) dry instant oatmeal
1/3 cup plus 2 Tbsp semisweet mini chocolate chips, divided
½ cup sugar free, reduced fat peanut butter
¼ cup packed brown sugar
3 Tbsp canola oil
2 Tbsp all purpose flour
1 tsp ground cinnamon
¾ cup finely chopped strawberries
- Preheat oven to 350”f. Place 12 inch skillet over medium-high heat until hot. Add oatmeal, cook and stir 4 to 5 minutes or until lightly browned. Immediately remove from skillet to a medium bowl. Set aside.
- Place 1/3 cup chocolate chips in medium microwavable bowl. Microwave on HIGH for 30 minutes. Stir chips and continue to microwave on high at 15 second intervals until melted. Stir in peanut butter, brown sugar, oil, flour and cinnamon until well blended. Stir in oatmeal.
- Press oatmeal mixture onto bottom of 9 inch square baking dish. Bake 10 to 12 minutes. Cool completely.
- Top crust with strawberries. Place remaining 2 Tbsp chocolate chips in small resealable storage bag. Microwave on HIGH for 30 seconds. Cut off tiny corner of bag: drizzle chocolate over strawberries. Cover and freeze for 2 hours. Before serving, let stand at room temperature for 10 minutes. Cut into 16 bars.
