Quick Fruit Couscous

2 ¼ cups orange juice                                             1 Tbsp margarine

1 tsp grated orange peel                                          ½ tsp salt

 1 package (10 oz) pre-cooked couscous                    1 cup mandarin oranges, drained

1 cup red grapes, cut in halves                                  6 oz firm tofu, drained and cubed

½ cup golden raisins

  1. Bring orange juice, margarine, orange peel and salt to a boil in large sauce pan over high heat.   Stir in couscous; cover and remove from heat.  Let stand 5 minutes.
  2. Fluff couscous with fork; stir in mandarin oranges, grapes, tofu and raisins until well blended.  Serve immediately or cover and refrigerate.
