Spinach-Pine Nut Whole Grain Pilaf
2 cups hot cooked brown rice or bulgur 1 ½ oz pine nuts or slivered almonds
2 ounces spinach leaves, coarsely chopped 1 Tbsp extra virgin olive oil
1 tsp dried basil leaves ½ tsp salt
¼ tsp red pepper flakes
- Place hot rice in large bowl.
- Add remaining ingredients and toss gently, until spinach is slightly wilted.
