Stuffed Turkey Tenderloin

2   10 to 12 oz turkey breast tenderloins                        

2 cups chopped fresh spinach leaves

¾ cup crumbled feta cheese                                         

 ¼ tsp ground black pepper

2 tsp olive oil                                                                           

1 tsp paprika

½ tsp salt                                                                                

1/8 tsp cayenne pepper

  1. Make pocket in each turkey tenderloin by cutting lengthwise from one side almost to, but not through the opposite side, set aside.
  2. Make stuffing.  In medium bowl, combine spinach, cheese and black pepper.  Spoon stuffing into pockets.  Tie shut with cook’s twine.
  3. In small bowl, combine oil, paprika, salt and cayenne pepper, brush over turkey.  Wrap each tenderloin in wrap.  Chill 4 to 24 hours.
  4. Preheat oven to 375’F.  Unwrap turkey and place in shallow baking dish.  Bake about 40 minutes or until no longer pink (170’F). Remove and sicard strings.  Slice turkey crosswise.
