Stuffed Turkey Tenderloin
2 10 to 12 oz turkey breast tenderloins
2 cups chopped fresh spinach leaves
¾ cup crumbled feta cheese
¼ tsp ground black pepper
2 tsp olive oil
1 tsp paprika
½ tsp salt
1/8 tsp cayenne pepper
- Make pocket in each turkey tenderloin by cutting lengthwise from one side almost to, but not through the opposite side, set aside.
- Make stuffing. In medium bowl, combine spinach, cheese and black pepper. Spoon stuffing into pockets. Tie shut with cook’s twine.
- In small bowl, combine oil, paprika, salt and cayenne pepper, brush over turkey. Wrap each tenderloin in wrap. Chill 4 to 24 hours.
- Preheat oven to 375’F. Unwrap turkey and place in shallow baking dish. Bake about 40 minutes or until no longer pink (170’F). Remove and sicard strings. Slice turkey crosswise.
